eggs, avocado and tomatoes on toast

My current go-to breakfast πŸ₯‘ Packed with ingredients that support gut health & blood sugar management. As well as a whole host of nutrients, healthy fats, protein, b vitamins & antioxidants 🍳 So tasty, but super simple!

What you need: 

- Sourdough bread

- x1 small avocado - chilli flakes, fresh lemon juice & sea salt to season 

- x2 organic, free range eggs 

- Handful of organic cherry tomatoes

- Sprinkle of pumpkin & sunflower seeds 

- Crack black pepper 

To make: Smash your avo, mix in fresh lemon juice, sea salt, chilli flakes & spread it over your toasted sourdough. Gently fry your eggs and tomatoes in coconut oil. Place on top of your avo, sprinkle with seeds and a crack of black pepper.
